Tanzania Kokoa Kamili 70%- Kokoa Kamili is a central fermentary based in Tanzania. They currently work with over 2,000 smallholder farmers, most of whom farm between 0.5-2 acres of cocoa. Kokoa Kamili pays a premium well above the market rate to farmers for their wet cocoa, and conducts its own fermentation and drying. By taking over the fermentation and drying process, Kokoa Kamili can produce more consistently higher quality cocoa beans.
Dominican Republic OKO Caribe 70%- Öko Caribe has perfected the art of working with small holder farmers in the San Francisco de Macoris region of the Dominican Republic. Business owners Gualberto and Adriano consistently deliver this high quality cacao, with deep chocolate and red fruit notes. Craft chocolate makers have won multiple awards with this cacao, and many use it as the base for their inclusion lines as well as for their single origin bars.
Ecuador Mindo Nacional 70%- Unroasted organic Nacional cocoa beans with the shell intact. These are the very same cocoa beans we use to make our chocolate. Venezuelan Carupano Pintao 70%- Farmers from "La Concepcion" in Rio Caribe select each cacao pod with care and attention to ensure that the incredible intense flavors of framboise, banana, raisins, noisettes and spicy poivre rose shine thought.
